Ingredients

12-18 6” donuts
For the donut:
  • 1/4 cup vegan butter, melted
  • 1 cup Gluten-free all purpose flour
  • 1 teaspoon Baking powder
  • 1/8 teaspoon Baking soda
  • 1/3 cup Florida Crystals® Organic Raw Cane Sugar
  • 1/4 teaspoon Kosher salt
  • 1/2 cup coconut based yogurt
  • 1 large egg
  • 1/2 tablespoon Vanilla extract
  • 1 tablespoon Plant-based milk or any kind
  • 1 cup Fresh blueberries
For the glaze:
  • 1 cup Florida Crystals® Organic Powdered Raw Cane Sugar
  • 2 tablespoons Plant-based milk or any kind
Instructions
To make the donut

Step 1

Preheat your oven to 350° F and spray a 6” donut pan with baking spray. Melt the vegan butter on the stovetop and set aside to cool. 

Step 2

In a medium size mixing bowl combine the flour, baking powder, baking soda, sugar, and salt. Whisk to combine. 

Step 3

In another medium-size mixing bowl combine the melted vegan butter, yogurt, egg, vanilla, and milk.

Step 4

Pour the wet ingredients into the dry ingredients, mixing with a spatula until just thoroughly combined. Do not over mix. 

Step 5

Add in the blueberries and mix lightly as not to crush them and turn the batter blue. 

Step 6

Spoon batter into donut pan halfway up. Bake 12- 14 minutes until edges are golden brown.

To make the glaze

In a small bowl, combine the powdered sugar and milk. Stir to mix until a glaze forms. Pour over donuts when warm.

Chef's Tip
  • Find the smallest blueberries you can, you can also substitute with frozen blueberries.
