Preheat oven to 325°F, line one baking sheet with parchment paper.

In a large bowl, mix the sugar, peanut butter, and egg until well combined.

Using an ice cream scoop, scoop out dough onto the prepared baking sheet. Flatten the cookies with a fork creating a crisscross pattern.

Bake for 18-20 minutes or until golden brown. Allow the cookies to rest for 5 minutes on the baking sheet and then transfer to a cooling rack.
